My kids love waffles and they can be healthy if you know what to add and what to avoid!! This is a fantastic protein packed recipe which is also gluten free, dairy free and egg free!! Yes you can eat waffles without breaking eggs!! I made both a chocolate version and vanilla flavoured and they went down a storm with the children - a perfect tea time treat!!

I love salads but when the weather turns colder I opt for warm salads with seasonal vegetables such as squash or root vegetables. This delicious dish is actually really simple to make and just as good eaten cold the next day. If you're not on a dairy free diet you could also add crumbled feta cheese to this dish. A wonderful vegetarian dish but equally delicious as an accompanient to meat and fish dishes.
