Well I have just come back from teaching another fabulous Gluten Free Cookery Day. The day focused on gluten free solutions to everyday staples such as healthy gluten free breads, pastries, muffins and treats. But it also included using a whole range of naturally gluten free grains and flours. A big hit on the day were my chickpea pancakes served with a creamy coconut Dahl. Here is a variation of that recipe using peas and cauliflower for additional nutrients and texture.

I am always on the look out for making new healthy snacks especially ones that my kids will love too. These fruit leathers are always a big hit in the family. Normally I make green ones as I like cramming in more kale and spinach or other greens into our diet but today I made an apple and pineapple version. The secret ingredient though is psyllium husks which creates a very bendy, flexible fruit leather but also has additional benefits for the digestive system.

I love salads but when the weather turns colder I opt for warm salads with seasonal vegetables such as squash or root vegetables. This delicious dish is actually really simple to make and just as good eaten cold the next day. If you're not on a dairy free diet you could also add crumbled feta cheese to this dish. A wonderful vegetarian dish but equally delicious as an accompanient to meat and fish dishes.
