Well I have just come back from teaching another fabulous Gluten Free Cookery Day. The day focused on gluten free solutions to everyday staples such as healthy gluten free breads, pastries, muffins and treats. But it also included using a whole range of naturally gluten free grains and flours. A big hit on the day were my chickpea pancakes served with a creamy coconut Dahl. Here is a variation of that recipe using peas and cauliflower for additional nutrients and texture.

I am always on the look out for making new healthy snacks especially ones that my kids will love too. These fruit leathers are always a big hit in the family. Normally I make green ones as I like cramming in more kale and spinach or other greens into our diet but today I made an apple and pineapple version. I love salads but when the weather turns colder I opt for warm salads with seasonal vegetables such as squash or root vegetables.
